Tired of boiled, steamed or roasted Brussels Sprouts?
Take raw sprouts and Shave them with a Microplane grater for an awesome, tasty, Summer Paleo slaw salad.

1/4 cup water
Zest and Juice of one lemon
Fresh cracked black pepper
½ cup finely grated aged Parmesan Cheese (optional!)
2 Tbs. extra-virgin olive oil
2 cups shaved or thinly sliced raw Brussels sprouts. (NOTE: Use a Microplane grater or Food Processor.)
Salt to taste

In a mixing bowl, combine ¼ cup water with lemon zest, lemon juice, and black pepper to taste. Add grated cheese while whisking the liquid to create a slurry-like consistency. Finish with olive oil. Add grated sprouts and stir well. Add salt to taste. Cover and chill for one hour, or serve immediately.
